CREMODAN® SE 40 is a fully integrated blend of food-grade emulsifiers and stabilis-ers. CREMODAN® SE 40 consists of uniform yellowish beads. All components are based on raw materials of non-animal origin.

Application Areas

  • Imparts very good melting resistance with fine and uniform texture
  • Imparts very creamy mouthfeel
  • Imparts excellent air distribution and stable overrun
  • Prevents shrinkage and retards ice crystal growth during storage
Usage Levels
The following general guidelines can be given:
(Based on total product, unless indicated otherwise)
  • 4% fat 0.50%
  • 6% fat 0.45%
  • 8% fat 0.40%
  • 10% fat 0.35%
  • 12% fat 0.30%
Directions for Use
CREMODAN® SE 40 may be added directly
at any stage during mix preparation prior to
pasteurisation and homogenisation, irrespec-tive
of the mix temperature chosen.
