GRINDSTED™ Pectin MRS 351 is a medium rapid-set high-ester pectin standardised with sugars.

GRINDSTED™ Pectin MRS 351 is an off-white powder extracted from citrus peel. Kosher quality available upon request.

Application Areas
Jams and jellies (>60% soluble solids), bakery fillings and other fruit systems.

Usage Levels
The following general guidelines can be give:
  • Jams and jellies 0.3-0.5%
  • Bakery fillings 0.5-0.7%

The optimal dosage for a specific application depends on the pH and soluble solids.

Directions for Use
We recommend dissolving GIRNDSTED™ Pectin MRS 351 in water before addition to the final fruit sys-tem. Further information on dissolving techniques may be obtained on request.
